His method has become the baseline for how every brisket gets smoked these days. Well, we decided to do our own twist on it and I have to say, it worked out great! It still gets wrapped but in a bit of a different way. Gone are the days of ripped foil or paper and losing those delicious juices. With our new and improved method, you can go fat cap up or fat cap down in a Big Green Egg and it won't matter.
