Mango curd is a smooth and creamy dessert filling or spread. This from scratch mango curd is easy to make yet so tangy and creamy. It is perfect for tarts and pie's filling, cake topping, or as a spread for scones. To subscribe:    / @dessertalchemy   ___________________________________________________ Mango Curd Fresh Mango flesh 130g Lime juice 10g Granulated sugar 30g Lime zest ½ Lime Egg yolk 3 Salt A pinch Unsalted butter (cold) 50g 1. Cut butter into cubes, refrigerate. 2. Cut mango flesh into cubes. 3. Add mango and lime juice into blender, puree until smooth. Strain the mango puree. 4. Wash lime and grate the lime rind to get some lime zest. 5. Add lime zest to granulated sugar and rub the zest into the sugar with your finger (to make lime scented sugar). 6. In a saucepan, add 3 egg yolks, sugar and salt, whisk until egg yolk turn slightly pale. 7. Add mango puree, whisk to combine. 8. Cook under low heat until the mixture thickens, it coats the spatula and when you run a finger across the spatula it holds a trail in the curd (keep stirring otherwise it will burn or curdle). 9. Remove from heat, add cold butter and whisk to incorporate the butter into the mango curd. 10. Strain the mango curd. 11. Pour mango curd to a clean airtight container and refrigerate overnight. _________________________________________________ 芒果酱/芒果凝乳 新鲜芒果肉 130g 青柠汁 10g 细砂糖 30g 青柠屑 ½ 青柠 蛋黄 3 盐 一小撮 无盐黄油(冷藏) 50g 1. 黄油切块,冰箱冷藏备用。 2. 芒果肉切成丁。 3. 芒果丁和青柠汁加入搅拌机打成果茸, 过筛。 4. 青柠洗干净,把皮剥成屑。 5. 青柠屑加入细砂糖中,用手指搓揉,让青柠皮的味道渗入糖里。 6. 锅里加入3个蛋黄, 细砂糖和盐,搅拌至蛋黄颜色稍微变浅。 7. 加入芒果果茸,搅拌至混合均匀。 8. 小火煮至浓稠,芒果酱可以挂住刮刀 (注意:要一直不停搅拌以免烧焦和结块)。 9. 熄火,加入冷黄油块,搅拌至混合均匀。 10. 芒果酱过筛。 11. 倒入干净的密封罐,冷藏隔夜。 _________________________________________________ BGM Song: Minimal Coffee Shop Jazz Background Music - B-Roll @b-rollcopyrightfreemusic Creative Commons — Attribution 3.0 Unported — CC BY 3.0 creativecommons.org/licenses/by/3.0/ _______________________________________________ This video has been uploaded to my YouTube channel only.
