*Leishan, Guizhou* In September 2024, I was invited to Guizhou to record the sounds of various cities. While searching for sound materials, I arrived at Leishan County. As I passed through a street selling raw food materials, I decided to stop and record some videos and sounds. Leishan (Chinese: 雷山; pinyin: Léishān, Hmu language: Zangx Xongx) is a county in the east of Guizhou province, China. It is under the administration of the Qiandongnan Miao and Dong Autonomous Prefecture. More than 90% of the population are ethnic Hmu (a subgroup of the Miao people). The basic ingredients of Guizhou cuisine are rich and regionally distinctive, including the following: 1. **Chili Peppers**: Guizhou people love spicy food, and chili peppers are an essential part of every meal. There are various types of chili sauces in Guizhou, such as “fermented chili” or “chili oil,” which are crucial in cooking. 2. **Sour Soup**: Sour flavors are a key feature of Guizhou cuisine, especially in the Qiandongnan region. Sour soup, often made from rice broth or fermented vegetables, is a primary seasoning for fish and meat dishes. 3. **Pickled Products**: Pickling is a common way to preserve food in Guizhou, such as pickled vegetables, meats, and sausages. These preserved foods have long storage life and distinctive flavors. 4. **Beans and Bean Products**: Tofu, dried tofu, and other bean products are common ingredients in Guizhou cuisine, particularly in stir-fries and hot pot dishes. 5. **Corn and Rice**: In mountainous areas of Guizhou, corn is a staple food, while rice is more common in lowland areas, especially in regions where rice farming is prominent. 6. **Potatoes**: Potatoes are another staple in Guizhou, especially in some mountainous regions where they are widely used in everyday dishes. 7. **Mushrooms and Wild Vegetables**: The mountains of Guizhou provide a variety of wild mushrooms and vegetables that often appear on the local dining tables, offering unique flavors and nutritional value. 8. **Beef, Lamb, and Poultry**: Residents of Guizhou’s mountainous areas often consume beef and lamb, while poultry such as chicken and duck is also a major source of protein.
