These deliciously crisp corn fritters are packed with healthy vegetables. You can make them with wheat flour or gluten-free flour as you please. We enjoy the fritters for lunch or supper, and of course they are always welcome during the cocktail hour! Ingredients are listed below: Corn Fritters Ingredients for 5-6 fritters (depending on size) 3/4 cup (100g) flour 1/2 teaspoon baking powder A pinch of salt and grinds of black pepper 1 large egg, beaten 1/3 cup (80ml) whole milk A drizzle of olive oil -- about 1 teaspoon 1 red bell pepper, diced (reserve a tablespoonful for the dipping sauce) 2 scallions, thinly sliced A handful of chopped fresh parsley (reserve a tablespoonful for the dipping sauce) 1 (8.75 ounce) can whole kernel corn, drained and patted dry For frying: The oil of your choice (I used olive oil) Dipping Sauce: 1 cup sour cream The grated zest of a lemon The juice of half a lemon (a tablespoon or more, to taste) The reserved diced red pepper The reserved chopped parsley Salt and pepper to taste
