Hoja Santa, also known as Yerba Santa, is a close relative of our beloved black pepper, but is not used nearly as much. It is a delicious and complex flavor that can be used for a wide variety of dishes (mostly in Latin cuisine) but the easiest and most introduction that I suggest is cooking it with eggs. Simple throw down a leaf in a skillet or comal, and break an egg slightly to one side, then season with salt. Once the egg is white you can flip the other part of the leaf onto it, and turn it over. It is delicious by itself, but even more lovely in a fresh corn tortilla with some salsa on top. Incredibly easy, very quick, and absolutely packed with flavor.
