Malvani Masala | मालवणी मसाला | Sanjeev Kapoor Khazana

A mix of multiple spices blended together to form a unique kind of masala which is this Malwani Masala. MALWANI MASALA Ingredients 10-15 dried red chillies (lavangi) 25-30 dried Kashmiri red chillies ¼ cup coriander seeds ¼ tsp fenugreek seeds (methi dana) 10-12 cloves 15-20 black peppercorns 2-3 trifal 1 tbsp cumin seeds ½ tbsp fennel seeds (saunf) 1 tsp caraway seeds (shahi jeera) 6-8 green cardamoms 2 black cardamoms 3-4 star anise 3-4 mace blades (javitri) 2 tsps stone flower (dagad phool) 2 inch cinnamon stick 2-3 bay leaves 2 tsps mustard seeds 1 small piece of nutmeg (jaiphal) 2 tsps poppy seeds (khas khas) 2-3 tsps turmeric powder Method 1. Dry roast coriander seeds till fragrant in a non-stick pan, add fenugreek seeds and roast for another 1-2 minutes on medium heat. Transfer on a plate and set aside. 2. Dry cloves, black peppercorns and trifal for 2-3 minutes on medium heat in the same pan, transfer on the same plate. 3. In the same pan, dry roast cumin seeds, fennel seeds and caraway seeds till fragrant, transfer on the same plate. 4. Similarly, dry roast green cardamoms, black cardamoms, star anise, mace blade, stone flower, cinnamon stick and bay leaves till fragrant in the same pan. Transfer on the same plate. 5. Dry roast mustard seeds till they splutter in the same pan and transfer on the same plate. 6. In the same non-stick pan, dry roast nutmeg and poppy seeds for 1 minute and transfer on to the same plate. Allow to cool. 7. Dry roast dried lavangi chillies for 1-2 minutes in the same pan and transfer on to another plate. 8. Similarly, dry roast Kashmiri red chillies for 2-3 minutes in a non-stick kadai and transfer along with lavangi chillies. Allow to cool. 9. Transfer the roasted spices except for dried red chillies into a grinder jar and grind to a fine powder. Sift the masala into a large bowl. 10. Similarly, grind the roasted dried red chillies to a fine powder and sift into the same bowl. 11. Add turmeric powder, mix, transfer into an air tight jar and use as required.
