What makes these eggless red velvet cupcakes so special? It's a soft, fluffy cupcake made even lighter from the fizzy reaction caused by adding baking soda to vinegar. In many recipes, buttermilk is used as the wet ingredient. But I like sticking to full fat whole milk as it provides a deeper, richer flavour to the cupcakes. There is also a mild hint of cocoa powder that offers a full bodied flavour to the cupcakes. This pairs very well with the tangy taste of cream cheese frosting. Made using the boiled milk buttercream frosting technique, I swap the butter with cream cheese and it adds an intensely creamy tangy flavour to the frosting. The cream cheese I use is very stable and on the firmer side, if you find that your cream cheese is more like cheese spread, I'd recommend splitting the cream cheese quantity in half and replacing the other half with butter. So, if the total amount of cream cheese in the recipe is 120 grams, use 60 grams room temperature butter and 60 grams cream cheese.
