Ingredients For Meatballs: Ground beef 1 lb Medium onion, grated, juice removed 1 Bread crumb 1/4 cup ground (finely) walnut 1 cup Large Eggs 1 Dried (crushed) mint 3 tsp pomegranate seeds 1/2 cup Pomegranate molasses 2 tbls Turmeric 1 tsp Salt 1/2 tsp Pepper 1/4 tsp For the Sauce: Small Onion (finely diced) 1 Oil 2 tbls ground (finely) walnut 1/2 cup Pomegranate juice 1/2 cup Pomegranate molasses 1/2 cup Water 1 cup Turmeric 1 tsp Salt & pepper to taste pomegranate seeds (to garnish) Brown sugar (optional) 1-2 tbls Salt 1/2 tsp Pepper 1/4 tsp Instruction For meatballs: 1. In a large bowl, combine ground beef, grated onion, bread crumb, ground walnut, egg, turmeric, crushed mint, salt and pepper. Mix well using your hands until you have a uniform mixture. 2. Take a chunck of the ground beef mixture (a liitle larger than a ping pong ball), stuff with a few pomegranate seeds, wrap and pinch the edges to seal. Roll and make a meatball shape. Place it on Large plate. Put it in the fridge For the sauce: 3. Heat 2 tbls of oil in a pot, add the diced onion. Sauté till golden in color (8 to 10 mins). 4. Add turmeric, mix and sauté for another 30 seconds. 5. Add the ground walnut, and sauté on low heat for 5 minutes. 6. Now, add Pomegranate molasses, pomegranate juice, water, salt and pepper. If your molasses is too sour, you can add 1 to 2 tbls of brown sugar. 7. Raise the heat to medium-high and bring the sauce to boil. 8. Now, reduce the heat to low and slowly add the meatballs to the sauce one by one in a single layer. 9. Cover the pot and let it simmer for 35-40 minutes. 10. Make sure not to stir while it’s cooking. 11. Serve it in a shallow casserole dish and garnish it with the pomegranate seeds.
