4th of July is here, and I would like to share some vegan recipes. The first recipe is perfect for the hot summer and the others two are so good for the sausage and burgers lovers. Punch fruit Ingredients ½ Cup Lemon Juice ½ Cup Maple Syrup 2 Cups Water ½ Cup Vodka (Optional) 1 ½ Cup Chopped strawberries 1 1/3 Cup blueberries 3 Slices Pineapple (½”) In a big size glass bowl mix the lemon juice, maple syrup, water, and vodka. Using a cookie star cutter, shape the pineapple. Add the strawberries, blueberries and pineapple stars to the bowl, mix. Enjoy! Mini Crescent Sausages. Ingredients 1 Pillsbury Crescent dough 7 Mini sausage (I used the Field Roast ones) Preheat the oven at 375 degrees. Line a baking sheet with parchment paper. Extend the Crescent dough. Using a pizza cutter slice the rectangle into 8 equal-sized strips. Place each sausage at the end of a strip and roll over until the sausage is completely cover. Bake for 10 min. Enjoy! Portobello mushrooms burgers Ingredients For the mushrooms 2 Medium size Portobello Mushrooms 3 Minced Garlic Cloves 1 Tbsp Balsamic Vinegar ½ Tsp Liquid Smoke 1 Tbsp Olive Oil ¼ Tsp salt 1/3 Cup Barbecue sauce To serve Sprouts Tomato Mayonnaise 2 Burgers buns For the mushrooms. In a medium size bowl add the minced garlic, balsamic vinegar, liquid smoke, oil and salt, mix. Add the mushrooms and marinate for 10 min. Heat a skillet and add the mushrooms, cook one side for 5min, brush with barbecue sauce, flip and cook the others side for 5 min more, brush with barbecue sauce. Add cheese on top. Cover with a lid a let it melt for a mins. To serve, Add mayonnaise to one side of the burger bun, layer with sprout, add the mushroom, a slice of tomato and another layer of sprouts. Enjoy!
