Easy coffee cake? Here it is! Bake our Coffee Loaf Cake for a slice ‘n’ serve treat! You will need... • Double shot espresso or 60ml strongly brewed coffee • 175g unsalted butter, softened • 100g caster sugar • 75g light brown sugar • 2 large eggs • 100ml whole milk • 225g plain flour, sifted • 1 tsp ground cinnamon • 2 tsps baking powder • ¼ tsp salt For the coffee glaze… • 2 tbsp espresso or very strongly brewed coffee • 3 tbsp melted butter • 130g icing sugar, sifted Method Preheat oven to 170˚ C/gas mark 3/325 °F. Grease and line a loaf tin Make coffee and leave to cool Add butter and sugars to a bowl and cream with electric beaters until fluffy. Beat in the eggs one at a time, mixing on a low speed each time Add the coffee and milk and mix on slow Add flour, cinnamon, baking powder and salt and fold until you have a smooth batter Pour mixture into the tin and bake for 45-50 minutes, or until baked. Leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely Make the glaze. Whisk together the coffee, melted butter and icing sugar. Drizzle over the loaf cake and leave to set
