This presentation will describe roles and responsibilities of various entities in food defense, including FSIS as a regulatory authority. Additionally, will discuss the concept of a functional food defense plan and consideration food production facilities can use to prevent, protect again, mitigate, respond to, and recover from an intentional contamination incident.
