Buon Giorno A Tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), demonstrates a really easy way to whip up pizza dough, as an alternative to the more laborious hand mixing/kneading method she shared in episode 10. You will require an upright mixer with a dough hook. Simply add 3 cups of flour, 1/2 teaspoon of salt, 1/2 tablespoon of olive oil, an 8 gram packet of active dry yeast and 1 1/3 cup of warm water. Briefly stir ingredients with a fork and then place in the mixer at speed 2, for about 30 seconds. At this point, check to see if the dough is too wet - if so, sprinkle in a little flour. If it sticking to the sides, sprinkle in a bit of water. Then increase the speed to a medium level, and allow to knead for about 8 minutes. The dough will easily glide off the dough hook. Shape into a ball, rub with a bit of olive oil, and place it on a floured surface. Place loosely, a sheet of clingfilm on top, and then add dishtowels or blankets to keep it warm. Check it at the hour mark - it should have at least doubled. In this video, it rested longer on account of Nonna having lunch, so you can see it has grown considerably. From this stage, you can use your hands to pull it apart for pizzas or use a rolling pin to help you arrive at the desired thickness. From here, you can make panzerotti, calzone or pizza - whatever you wish. And as always, ... buon appetito!
