How To Set Your Smoker's Exhaust Vent

Hey everyone, recently I've been getting a lot of questions about my Char-Griller Gravity 980 and the exhaust vent settings on it. So today we are going to talk about how to set the exhaust vent on your smoker and what are some of the advantages of the different settings. To begin with, vent settings on forced draft systems, that is where we have a temperature controlled fan regulating the airflow in our cooker, like in the gravity 980 or pellet cookers isn't something you always see because the fan controller will adjust itself to make sure the temperature stays constant no matter what the exhaust vent is set to. However, when we add in the fact that we are dealing with an insulated cooker it now becomes more relevant. Basically in most situations you are going to want to let that exhaust vent sit wide open so you can get as much convection air and smoke over your food as possible. This will give you more of that smokey flavor you're looking for. However, in instances where you are trying to preserve fuel or want less of a smokey flavor you can shut that vent down to about half and keep more of that heat inside the cooking chamber. Doing this lets the controller know that it doesn't need to stoke the fire as often because the heat isn't escaping as fast as it does with the vent wide open so your fuel is burned at a slower rate. This will also naturally push less smoke through the chamber and onto your food which I think could be a great option if you're taking advantage of your cooker for something like baking, which you should definitely be doing.
