Let me hit you with some vegan wisdom... not all vegan food is terrible, I love my mate Tomaso he is vegan, his food is unreal... the only thing that makes vegan food terrible is the lack of seasoning and any care for flavour! So this was a fluid party of making some pasta then making some sauces.. 3 different pasta sauces Carbonara, Vegan Carbonara and a classic tomato sauce! For the Pasta: 400g Fine Semolina (i think we used course haha) 180ml Water Mix together and leave to rest, then put through kitchen aid pasta attachment! Which is amazing but a pain in the arse to clean! For the Sauces: Nduja Carbs A splodge of Nduja (optional) 2 egg yolks a load of pecorino Black pepper Rough Method: Gently fry the nduja then remove from the heat and leave to cool slightly (not for an hour) then mix the egg yolks, pecorino and black pepper together. Add to the pain and gently heat with the residual temp of the pasta and a little pasta water to make the sauce lube out. Vegan Carbs - this is a rough guess waiting on tomaso for full recipe Tempeh Smoked paprika Peanut butter Cashew nuts Plant based cream Kala namak Tumeric Pepper 1 tsp Miso Rough Method: Dice the tempeh then fry in oil with smoked paprika and peanut butter. For the sauce: Boil the cashed nuts for 10-15 minutes then blend the nuts with plant based cream - a rough guide is 50/50 weight of nuts to cream. Then add in a tiny pinch of kala namak and turmeric loads of pepper and a tsp of miso. Blend until smoothish and balance with more kala namak and miso. Cook pasta and mix through sauce! Tomato sauce Pasata garlic Loads of olive oil Pour everything into a pan and gently poach for 1-2 hours! Make sure the oil is covering the sauce. Enjoy!!!!
