INGREDIENTS: 1/2 KL LAMB LEG (YOU CAN USE BEEF) 4-6 TBSP VEGETABLE OIL 1 BIG ONION (CHOPPED) 1 TSP SALT 1/4 TSP BLACK PEPPER 1/8 TSP CHILLI POWDER 1/8 TSP CINNAMON POWDER 3 TBSP TOMATO PASTE 1 TBSP TURMERIC 3 DRIED LIMES 2 BIG TOMATOES 1 GARLIC HEAD (OPTIONAL) 3 1/2 CUPS BOILED WATER FOR EGGPLANTS: 4 THICK EGGPLANTS 3 TBSP SALT TO SPRINKLE 1 CUP VEGETABLE OIL FOR FRYING YOU CAN SERVED THIS WITH WHITE RICE OR SAFFRON RICE, SALADS AND SABZI (PERSIAN HERBS) NOTES: . I PUT THE WHOLE GARLIC LIKE THIS BECAUSE MY HUSBAND DONT LIKE THE TASTE OF THE GARLIC, BUT PUTTING THIS WAY MAKES YOUR STEW DELICIOUS WITHOUT THE PUNGENT TASTE OF THE GARLIC. . YOU CAN USE ORDINARY BIG PAN FOR STEW IF YOU DON'T HAVE PRESSURE COOKER. IT WILL TAKE TO 2 1/2 TO 3 HRS TO COOK UNTIL THE MEAT BECOMES TENDER. .BE GENTLE WITH SALT TO PUT IN YOUR STEW. THE FRIED EGGPLANTS ARE SALTED AND IT WILL GOES TO THE STEW AS WELL. .PLEASE USE BOILED WATER.
