My Ron absolutely loves these, they can easily become a meal, I side them with an assortment of chips, cut up veggies or a delicious salad, and don't forget your favorite beverage! I have created the perfect simple recipe for these out of this world Armadillo Eggs. INGREDIENTS---------------- 6 Large Jalapeños (seeds and membranes removed) 4 oz. cream cheese (softened) 1 finely chopped green onion 1/3 C. finely grated Colby jack cheese 1/4 tsp garlic powder 6 slices thin cut bacon (as needed) 1 lb.
