Box 256 Jefferson Valley, NY 10535 Contact Me [email protected] Follow me on Instagram frugalmoneysaver Creamy Chicken and Rice 2 cups cooked rice 1/4 cup butter 1/4 cup flour 1 cup milk 1 cup chicken broth 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp pepper 1 1/2 to 2 cups cubed COOKED chicken 1 cup grated cheese (cheddar, swiss etc...) 1 cup sour cream 15 crushed buttery crackers Preheat oven to 425 (Serves approx. 4-6) Grease 8x8 baking pan Put cooked rice into the bottom of the dish In a saucepan melt the butter and add the flour whisking approx. 2 min over medium heat Add 1 cup of milk continuing to whisk until thick and creamy Add 1 cup chicken broth and continue to whisk for approx 2 min. Season mixture Lower heat and add the grated cheese mixing Add the sour cream and incorporate Add the cut up chicken and stir Careful mixture is HOT Pour over the cooked rice Top with crushed crackers Bake approx. 15 min. till hot and bubbly ENJOY!
