If you’re craving a crunchy, savory snack with a deliciously spiced filling, this is the perfect recipe. We’re using mashed potatoes, peas, onions, and a mix of spices to make the most comforting samosas you can make at home. Recipe: Ingredients: 4-5 medium potatoes, peeled and chopped 1 small onion, diced 1/2 cup peas 3 tbsp olive oil 1 tsp chicken stock powder 3 tsp sugar 1/2 tsp turmeric 1/2 tsp cumin 1 tsp medium curry powder (adjust to taste) Salt, to taste Black pepper, to taste Samosa pastry sheets (store-bought) 1 tbsp cornstarch + water (for sealing the samosas) Oil for deep frying Instructions: Boil the Potatoes: Peel and chop your potatoes into small pieces. Boil them for about 20 minutes until soft, then drain and rinse under cold water. Set aside. Prepare the Filling: Dice your onion and heat 3 tablespoons of olive oil in a pan over medium heat. Add the onions and cook for about 5 minutes until they start to soften and turn golden. Season with salt, black pepper, and a pinch of both turmeric and cumin. Add a teaspoon of chicken stock powder and sugar to give the filling some sweetness. Stir in 1 teaspoon of curry powder, and let it cook for another minute. Add a bit of water if needed to make a saucy mixture. Mash the Potatoes: Combine the boiled potatoes with your onion and spice mixture. Add the peas and mash everything together. You can use a potato masher or a fork to get a smooth filling. Assemble the Samosas: Take your store-bought samosa wrappers and shape them into pockets. Fill each wrapper with a spoonful of your potato filling, then seal the edges using a little cornstarch mixed with water. Deep Fry: Heat oil in a pan or wok to medium heat. Carefully drop the samosas into the oil and fry them for 3-4 minutes, turning occasionally, until they’re golden brown and crispy. Serve: Once crispy and golden, remove the samosas from the oil and drain on paper towels. Serve them hot and enjoy the crunch! You can dip them in your favorite chutney or sauce.
