The Best ENCEBOLLADO in Ecuador HANDS DOWN 🇪🇨 | Ecuadorian Food

You can eat encebollado all over Ecuador - but if you want to try the best Ecuadorian encebollado you'll want to come here. I'm here at El Pez Volador, which is known as one of the best huecas in Guayaquil. And it’s so famous at one point Anthony Bourdain was here. We are having a typical Ecuadorian breakfast from Guayaquil. The first dish is called bollo. Bollo is similar to a tamal. But because we’re in Guayaquil it’s also very different. Instead of being made from corn or maiz it’s actually made from plantain. Because that is what is plentiful here. It is filled with albacore tuna and also the sofrito is made from garlic, onion, tomato and peanuts. Peanuts are very common here on the coast. And then finally, instead of being wrapped in a corn husk, it's actually steamed in a banana leaf. It served with rice, because this is meant to be a filling breakfast. And then also some pico de gallo, which is just a bunch of fru, which is some fresh onion, herbs, tomato. And then of course you have aji. Now aji here on the coast is a little bit different. It's not going to be the same as what you get in Cuenca, which is sad because I love the tree tomato aji, but this is spicier and it's also vinegar based. The albacore tuna is so good. Not fishy at all. I love fish for breakfast actually. And then some of the plantain here. It's just soft, creamy plantain. Almost like a creamy potato, a little bit gelatinous, but not in a weird way. I can't believe that they served this with rice, because this is already so hearty on its own with the plantain. I think I might actually like bollo, more than tamal. They may not let me back into Cuenca after saying that. But this is so, so good. Peanut not too peanutty, just like a nice layer, like earthy layer balance. Now we're here to have one of my favorite breakfasts in the entire world. This Ecuadorian breakfast of encebollado is the best thing I have ever had for breakfast. I had it a few years ago and I've been dreaming about it ever since. I did not have it in Cuenca, although you can get encebollado everywhere. But I believe if you're going to have a fish soup, you should have it on the coast. This is one of the most famous places to have it. And encebollado is basically, references an onion soup. There's tons of red onion in here. The best quality soups will have albacore tuna, a rich broth. And this is known as a hangover cure. But people just eat it all the time. But very, you'll notice in the markets, very, very popular on Sundays. And so how you eat encebollado can be a little bit controversial. However, the purists believe the only thing that you can have is lime juice. And so, that's all that I've put into it. Although aji would be acceptable.
