I picked up a tasty roast of prime rib, USDA Prime grade, from my local butcher @babefroman305 and let is rest at room temperature for about 2 hours before I started cooking. I coated the roast with a light layer of mustard and evenly seasoned with sea salt, freshly ground pepper and garlic powder. I cooked it using the rotisserie on the @aspirebyhestan grill for 2 hours. I basted the roast every 30 minutes with melted butter, chopped rosemary and thyme and salt. I also tried something new today, I used the @hestanhome charcoal tray accessory with Apple wood chunks that were soaked in water overnight. I let them smoke in the grill and this really enhanced the flavor of the roast. It was also cool to see the wood chunks smolder near the roast and it smelled incredible. I monitored my cook with my wireless @meatergram thermometer to reach an average internal temperature of 115 degrees. I pulled the roast out and let it rest, covered under aluminum foil, for 25 minutes. Resting brought the internal temperature to 127 degrees and then we cut it to slices. It came out so juicy, so soft and with such amazing flavor.
