Making Dandelion Jelly

Today I'm bringing yall along with me and showing yall how I make my Homemade dandelion jelly. Recipe Down Below Recipe: Ingredients: 4-5 cups of dandelion petals 5 cups of water 2 Tbsp of lemon juice 1 box of powdered pectin Instructions: Remove the yellow petals and the flower parts. Put in a 8-10 pot and put 5 cups of water into pot. Bring to a boil. Once boiling remove from heat and set aside. Strain petals and flowers using fine screen mesh, strainer or cheese cloth. You should get about 4 cups of dandelion tea. In a large and deep stock pot combine tea, lemon juice and pectin. Bring it to a boil. Add sugar all at one time. Bring back to full rolling boil. (Meaning the boil cant be stirred down). Boil for 2 minutes while constantly stirring. (It is normal for it to foam, You can remove it before filling jars). Remove from heat. Water bath canner: Make sure your jars have been sanitized and are hot. Ladle jelly into jars leaving 1/4" headspace. Use debubbler to remove air pockets around the edge. Wipe the rim with vinegar (this cleans the rim so that it will seal better). Process jars for 10 mins (check your altitude, elevation changes processing times). Remove from canner and set on towel on counter.( Be careful not to tip the jars. Extra water on top is fine, it will evaporate). Label and date jars. Yields 12) 4oz jelly jars
