In Thailand, there are a number of different types of water plants all referred to as “lotus.” So the actual lotus in English includes the big lotus leaves, roots, and flowers, but the stem is very tough and inedible. What we’re harvesting in this video is referred to in Thai as lotus stems, but in English it’s actually water lily. Phatthalung (พัทลุง), Thailand - Welcome to Phatthalung, which is one of my favorite provinces in Thailand - one of the most relaxing and chilled out places you can visit in Thailand. Today we’re at lake Thale Noi, famous for lotus and water lilies. After we harvest wild lotus stems and flowers, we’re going back to Uncle Sanan’s house to cook some spicy Southern Thai food - plant based (vegan) food. We also harvested fresh water mimosa (ผักกระเฉด pak krachet), which is one of my favorite vegetables, so it was very cool to be able to pick it fresh - actually forage it wild - from the lake. In order to get cooking, Uncle pounded up some garlic and pepper, and then stir fried both the water lily lotus stems with garlic and black pepper and soy sauce. Then he also made the water mimosa using the same recipe. Next, he pounded up some fresh turmeric and stir fried it with rice to make an amazing bright orange turmeric rice, which he wrapped in a lotus leaf for extra flavor. It was an amazing plant based vegan Thai food meal.
