Squash Casserole Recipe 4 Cups yellow summer squash cooked and drained 1 cup sour cream 1 (10 3/4 oz) can cream of chicken soup undiluted 1 medium purple onion 1 bunch green onion chopped with tops 1 8 oz can water chesnuts drained and chopped 1 2 oz jar diced pimento 2 Cups shredded velveta cheese 2 sticks of melted butter 1 envelope of Ranch Dressing mix 2 to 3 cups of crushed cracker crumbs Preheat oven to 350 degrees F. Grease a 9x13 baking dish. Mix all ingredients together, except 1 stick of butter, ranch dressing and cracker crumbs Combine remaining butter, ranch dressing, and crackers for topping Pour squash mixture into prepared baking dish, then add and spread topping. Bake in oven for 35-45 minutes on 350. Marinated Vegetable Salad (Marinated Bean Salad) Taken from Angels in the Kitchen Cookbook Saint Lukes Lutheran Church, Florence,SC 1996 3/4 C Vinegar 1/2 C Vegetable Oil 1 tsp salt 1 C sugar 1 T water 1 tsp pepper 1 16 oz can French style green beans, drained 1 can dark red kidney beans 1 17 oz can small peas, drained 1 12 oz can shoe peg whole kernel corn, drained 1 C chopped celery 1 green bell pepper, finely chopped 1 bunch green onions, chopped Combine first 6 ingredients in a medium saucepan. Boil, stirring to dissolve sugar. Let cool. Combine vegetables and stir into vinegar mixture. Cover and place in refrigerator at least 12 hours. Stir occasionally. Serves 8 Brown Rice Recipe- Angels in the Kitchen Cookbook-1996 p.36 submitted by Mary B. Frick 1 can Campbell's consomme beef soup 1 medium onion chopped fine 1 can Campbell's beef broth 1 large can mushrooms 1 stick butter or margarine 1 1/3 cup rice Dash of Worchestershire Sauce 1 can sliced water chesnuts 2 T Lipton Onion Soup Mix Dash of Soy Sauce Mix all ingredients and pour over rice. Add salt. Cook 1 hour at 350 degrees. After 30 minutes passes, remove from oven and stir. Cover with aluminum foil, and bake at 350 degrees 30 more minutes
