This wholesome dish is a staple in Odia cuisine and is often prepared during festivals and special occasions. Dalma is a unique combination of lentils (usually toor dal or moong dal) and a variety of vegetables such as pumpkin, raw banana, brinjal, and green papaya. The dish is flavored with a special blend of spices, including panch phoron (a mix of five spices), and garnished with fresh coconut and coriander leaves. Dalma is not only delicious but also packed with proteins, vitamins, and minerals, making it a healthy choice. It is typically served with steamed rice or jeera pulao, making for a comforting and satisfying meal. ngredients: 1 cup toor dal (split pigeon peas) or moong dal (yellow lentils) 1 potato, peeled and cubed 1 carrot, peeled and cubed ½ cup pumpkin, peeled and cubed ½ cup brinjal (eggplant), cubed ½ cup raw banana, peeled and cubed ½ cup green papaya, peeled and cubed 1 tomato, chopped 1 onion, finely chopped 1 inch ginger, grated 2 green chilies, slit 1 bay leaf 1 teaspoon turmeric powder Salt to taste 2 tablespoons ghee (clarified butter) 1 teaspoon panch phoron (a mix of mustard seeds, cumin seeds, fenugreek seeds, fennel seeds, and nigella seeds) 1 dry red chili 2 tablespoons grated coconut Fresh coriander leaves, chopped, for garnish Instructions: Prepare the Dal and Vegetables: Wash the dal thoroughly and soak it in water for about 30 minutes. Drain the water and add the dal to a pressure cooker along with 3 cups of water, turmeric powder, and salt. Add the cubed vegetables (potato, carrot, pumpkin, brinjal, raw banana, and green papaya) to the pressure cooker. Add the chopped tomato, onion, grated ginger, green chilies, and bay leaf. Close the lid and cook on medium heat for 3-4 whistles or until the dal and vegetables are cooked and soft. Prepare the Tempering: In a small pan, heat the ghee over medium heat. Add the panch phoron and dry red chili. Sauté until the spices start to splutter and release their aroma. Pour this tempering over the cooked dal and vegetables in the pressure cooker. Mix well. Final Touches: Adjust the consistency of the dalma by adding more water if needed. Bring it to a boil and simmer for a few minutes. Garnish with grated coconut and chopped coriander leaves.
