Ep 33: Fire Placement in the Wood Fired Oven

When I’m going to fire up my oven, I’m taking three things into consideration: What I’m cooking. What kind of heat I’m looking for. And where I’m going to place my fire. Once the oven has reached the temperature I’m looking for, my goal is to have as much floor space as possible, and only as much fire as I need to maintain that temperature. Where you place your fire can determine how much available space you have to cook with, and how you can take advantage of the variable temperatures between the fire and the oven opening. The effectiveness of the fire in any wood oven depends on a combination of the oven’s thermal mass, the insulation you have around it, and how much heat retention that produces. An oven with good heat retention will require less fuel to maintain the temperature, which means a smaller fire, which gives you more surface area to cook with, and I think much greater flexibility. Where you place your fire is all a matter of personal preference and what feels comfortable. But it’s fun to experiment with it, so I really recommend you try placing the fire in different areas to see how you can get the most out of your wood oven. The more you use your oven the greater your understanding of how it performs, and what it’s capable of, and your instincts will become more in tune with it each time you use it.
