Here's how it's prepared: Instructions: Prep the Dal: Wash the chana dal thoroughly. Soak it in water for about 30 minutes for faster cooking. Boil the Dal: Drain the soaked dal and pressure cook it with 3 cups of water, salt, and turmeric powder for 2-3 whistles. The dal should be soft but not mushy. Temper the Spices: Heat mustard oil in a pan until it smokes, then reduce the flame. Add cumin seeds and bay leaf, let them splutter. Then add the minced garlic and ginger, sauté until golden. Add the Veggies: Add chopped onions and green chilies, sauté until the onions turn golden brown. Then add tomatoes and cook until they soften and blend with the onions. Spice it Up: Mix in red chili powder, cumin powder, and garam masala. Sauté for a minute until the spices release their aroma. Combine the Dal: Pour the boiled chana dal into the pan. Stir well to mix the tempering with the dal. Let it simmer for 5-10 minutes, adjusting the consistency with water as needed. Final Touch: Garnish with fresh coriander leaves. Serve hot with rice or roti.
