How to Cook Suon Ram Man (Vietnamese Caramelized Pork Spare Ribs)

Here's the instructional video for my Caramelized Pork Spare Ribs! The meat is so flavorful and fall off the bone tender. Ingredients: 1 1/2 lb pork spare ribs 1-2 tbsp cooking oil 1 tbsp white or brown sugar 1/2 cup water (add more if needed) 1 green onion for garnish 1 Thai chili (optional) Marinade: 1 minced shallot 2 minced garlic 1 chopped white part of a green onion 1/2 tsp brown sugar 1/2 tsp salt 1/2 tsp black pepper 1 tbsp fish sauce Season to taste: I added 1 tbsp sugar and 1/2 tbsp fish sauce. You can add more or less if needed Instructions: 1. Cut ribs into bite size pieces. 2. Boil on high heat for a few minutes until all the impurities rise to the top. Then rinse and scrub ribs well. 3. Add ribs and all marinade ingredients in a bowl. Mix and marinade for at least 20 minutes. 4. Heat 1-2 tbsp of cooking oil in a pan on high heat and add 1tbsp of sugar. This is the caramelizing process. 5. Stir the sugar and watch it turn brown. Once it turns a nice golden brown turn the heat down to medium and add your ribs. Make sure to monitor your sugar, don't let it turn black because that means it's burnt and will taste bitter. 6. Add ribs and stir ensuring it's coated evenly with the caramelized sugar. 7. Add 1/2 cup water and simmer with the lid closed for 25 minutes. Stir occasionally and add more water if needed. This process will tenderize the meat. 8. After 25 minutes take off the lid and season to taste. Add more sugar and fish sauce if necessary. I added 1 tbsp sugar and 1/2 tbsp fish sauce. 9.Continue cooking until sauce thickens. 10. Garnish with black pepper and chopped green onions. 11. Add some Thai chilies if you want an extra spicy kick.
