Tulshi Pramanik of Natna Village, Karimpur, Nadia Dist. W.B. Kochu, also known as Taro in English and Arbi in Hindi, is a root vegetable belonging to the Araceae family, widely cultivated and cherished for its versatility in culinary applications. Across Bengal and Bangladesh, numerous varieties of Taro are cultivated, with different parts of the plant, including the root, stems, corms, and leaves, used in various regional dishes. In some parts of Nadia district bordering Bangladesh, a particular variety known as Dostol Kochu is prevalent, with both its stems and leaves utilized in cooking. In this episode, we showcase a unique and popular dish featuring the fish head of Ilish, renowned for its exquisite flavor. Additionally, a vegetarian version of the dish is prepared using dessicated coconut. For this recipe, only the stem of the Taro plant is utilized, boiled, drained, and then cooked with essential spices and green chili paste, offering a delightful culinary experience.
