Ingredients : Marination : 400 gms Pork (boneless, cut into medium size cubes) 1 gooseberry sized Tamarind (soaked in warm water for 15 minutes) 2 medium size (150 gms) Onions - finely chopped 7 to 8 nos (18 gms) Garlic - finely chopped ½ inch (5 gms) Ginger (julienned) ½ tsp Turmeric Powder 1 tsp Coriander Powder (dhania powder) 1 tsp Kashmiri Chilli Powder ½ tsp Black Pepper Powder (kali mirch powder)- coarsely ground ½ tsp Fennel Seeds (saunf) - coarsely ground ½ tsp Cumin Seeds (jeera) ¼ tsp Fenugreek Seeds (methi seeds) - coarsely ground ½ tsp Salt (or as per taste) 2 nos. Green Chillies (whole) 2 nos. Bay Leaves (tej patta) 1 no. Cinnamon Stick (dalchini) 1 no. Green Cardamom (hari elaichi) 3 nos. Cloves (lavang) 1 sprig Curry Leaves ½ tsp Sugar (to balance out the flavors) Other Ingredients : 2 tbsp Coconut Oil (use as per your diet restrictions) ½ tsp Fennel Seeds (saunf) 1 no. Green Chilli (finely chopped) 15 to 18 nos. (50 gms) Shallots (roughly sliced) 10 nos (15 gms) Garlic (finely chopped) ½ inch (5 gms) Ginger (finely chopped) 1 sprig Curry Leaves 3 nos.
