Candied citrus slices are an awesome cake decoration because they're beautiful AND delicious! How to make candied citrus slices: Slice your fruit about 1/4 inch thick. Simmer in boiling water for 10-15 minutes until tender then drain. Make a syrup with 2 parts granulated sugar to one part water. Simmer the citrus slices in the syrup over medium low heat until they are shiny and translucent. When the slices are done, place them on a rack to drain and let sit out overnight to dry.
