Camp Oven Pot Roast

While camped out in Escalante I saw a nice looking chuck roast at the local market so I picked it up and made some camp oven pot roast. I first season and brown the roast on all sides to get a sear on the outside and also to render out a little of the beef fat. Then dump in some mixed veggies like potatoes, onion, carrots and garlic. For some liquid I used beef gravy mix and poured it over everything then let it cook for well over an hour in the camp oven using charcoal. I was running short on cook time so I pulled it after 3.5 hours so we could have our meal but you can certainly cook this much longer to further tenderize the roast.
