weber 22 and the snake method is all you need for a great brisket started the night before with trimming and seasoning the brisket with worcestershire as a binder. i used salt and pepper with a bit of Killer Hogs HOT BBQ RUB. i let season over night in the fridge. I placed two rows of 2 charcoal briquettes to create a snake. lit about 5 birquettes and placed them at the one end of the snake. bottom vent about half way and top vent open all the way gave me a temp of 250 for a few hrs. a few pieces of hickory chunks were placed on the charcoal. I placed the brisket away from the heat source and began to smoke. until the bark set which was at 5 1/2 hrs. wrapped in foil with beef tallow and placed in an oven at 275. waited untill my temp prob reached 205. pulled brisket and checked for tenderness . set in cooler for a min of 1 hr. cut and enjoy.
