In this video, I will show you how to make Japanese milk bread, known as Shokupan, with the Yudane method. This is a soft, fluffy, creamy white sandwich bread with a hint of sweetness. The Yudane method mixes equal parts of flour with boiling water and must be made the day before. But this will result in a more tender texture and the bread will stay fresher longer. It is perfect for French toast, egg salad sandos, or just toasted with salt and butter. So let's get started! ------------------------------------------------------------------------------------------------------------------------- YUDANE INGREDIENTS: Bread flour 50g (1/4 c + 1 tbsp) Boiling water 50g (3 tbsp + 1 tsp) MILK BREAD INGREDIENTS: Whole milk (room temp) 150g (1/2 c + 2 tbsp) Granulated sugar 15g (1 tbsp) Instant dry yeast 3g (1 tsp) Unsalted butter (room temp) 10g (2 tsp) Bread flour 190g (1 1/2 cup) Salt 5g (1 tsp) Egg wash (optional) Notes: 1. It's best to measure ingredients by weight rather than volume. 2.
