In this video I share my routine as a Muslim mum of seven. This particular day was during the half term holidays in October, so the kids were not at school. I share the recipe for a gorgeous Chicken Tikka Masala, which was requested by the kids. I hope you enjoy watching :D Buy the Brieftons QuickPush Food Chopper here: https://amzn.to/3Cz7gLH Chicken Tikka Masala recipe Ingredients: Marinade for the chicken - 700g Chicken Breast (cubed) - 1/2 cup Greek Yoghurt - 1 teaspoon Salt - 2 tablespoons Tandoori Masala - 1/2 teaspoon Red Chilli Flakes - 1 tablespoon Garlic & Ginger Paste - 1 tablespoon Lemon Juice - 1 tablespoon Sunflower Oil For the sauce - 1 tablespoon Sunflower Oil - 2 Medium Onions (finely diced) - 1/2 teaspoon Salt - 1 teaspoon Paprika - 250g Passata - 150ml Double Cream - Coriander to garnish Method - Add the ingredients for the marinade to a large bowl and mix until well combined. Add the chicken pieces and mix to coat in the marinade. Allow to marinate in the fridge overnight or at least half an hour if short on time. - In a pan on medium heat, add the oil and cook onions until soft and translucent. - Add the marinated chicken and cook on a medium heat until the sauce begins to dry up and chicken is cooked (approximately 10 minutes). - Stir in the passata, and add the salt and spices. - Stir in the double cream. Bring pan to the boil, and cook for a few minutes on high. Turn off heat & drizzle a little double cream over the Chicken Tikka Masala.
