This salad is perfect for a summer supper! The meat and vegetables are all complete on one bowl. This is an absolute favorite summer recipe for me in our beautiful Minnesota summers. Please follow me, I am trying to grow this channel so I can share so much with you. Recipe: 3 boneless skinless chicken breasts (about 1 1/2 pounds) 2 cups of water 2 Tbsp of Soy Sauce 2 Tbsp of garlic cloves minced 2 cups broccoli in bite size pieces 1/2 cup of red onion or sweet onion 1 cup of dried cranberries 1 cup of mayonnaise 3 Tbsp of orange marmalade. 1/2 cup of crushed peanuts (optional) In a large skillet, place chicken breasts in a single layer, pour water and soy sauce over chicken, sprinkle with garlic. Cover and cook about 15 minutes or until cooked through. Remove chicken from pan, cool and cut into bite size pieces. In a large bowl, combine chicken, broccoli, onion, peanuts and cranberries. In a small bowl, whisk together mayo and marmalade. Pour over chicken mixture. Cover and refrigerate for 4 hours before serving.
